Drawing is how I process an idea best. I usually have a roll of parchment paper close by and I sketch out menus, the dishes I will serve food on and I add notes for myself. I’ve done this throughout my career. It helps me focus, but it also gives space to explore and expand an idea.
Particularly for my plateware and ceramic designs. I’m usually inspired by something in nature or something maybe architectural that I see. But it is often the food itself and the function of texture and form that directs my thinking - is there a sauce, do I need to pour, or scoop? Is a dish served hot or should it be very cold?
All of these things add to the experience and provide creative opportunity. I often wake up in the middle of the night with an idea, and sketch it out.
